A family affair-Vegan in week two

We are lucky enough to have some great friends who we strong armed convinced to do the 30 day vegan challenge with us. On Tuesday they came over we fed them Indian food and last night we went to their house and had this amazing potato/rutabaga/leek/mushroom dish with a cashew "cream" sauce. It was fake cream made from nutritional yeast (a first for all of us).

If you would have invited people over and fed them that dish there's no way they would have thought it was vegan and not made without loads of butter and cream. It was fantastic! Think potato au gratin. That's what it resembled, but better because it was made healthy! We also made a yummy green salad for roughage. For dessert Andrea made a chocolate pudding that Scott said was the best pudding he'd ever had. It was really fantastic. Basically just vegan chocolate chips (I think the only difference between vegan and non vegan is the machine they're processed on, not the ingredients). So chocolate chips (whole bag), 2 cups of chocolate soy milk, and half a brick of soft tofu. Andrea is a vita-mix whore so she processed it all up in that jet engine of a blender. It gets hot ya' know! Then we transferred it into dishes and let it set up in the fridge. YUM!!

  2. My friend made us vegan fettuccine alfredo once. He used almond milk and finely ground almonds. It was DELISH. I love vegan food. I just said, last night, that I really do want to make the move from vegetarian to vegan one day. My husband wasn't too keen on that idea, but I'll do it with or without him. After all, I cook all his meals anyway. LOL!

    I love that you're doing this! I LOVE it. Your body will too!
