Quinoa. Eat it, Love it

2 tablespoons fresh lime juice
2 tablespoons unsalted butter, melted and cooled
1 tablespoon vegetable oil
1 teaspoon sugar
1 cup quinoa
1-2 cans of black beans, rinsed and drained
2 cans of RoTel tomatoes
4 scallions, chopped
1/4 cup chopped fresh cilantro
2 tablespoons of Ms. Renfro's jalapeno salsa

Cook 1 cup of quinoa with 1.5 cups of water, bring to a small boil, then reduce to low heat and cover for 15-20 min. The fluff like rice. Wisk, melted butter, veg oil, sugar, and lime juice together. the dump all other ingredients in and mix
This makes a TON and we eat off it for days. We had it last night with blue corn chips. The corn chips are the most unhealthy thing about it, but as long as you don't go nuts with the chips, this meal is probably one of the healthies things you'll ingest. Quinoa is so good for you.

Make it this week, you won't regret it.

  2. Sounds delicious. Ive never actually eaten Quinoa so its great to have a tried and tested recipe... I am going to try and find some in the store tomorrow :o)
